Sprouting buckwheat has numerous health benefits:
- Increased nutrient availability: During germination, enzymes are activated that make the nutrients in buckwheat easier to digest and more readily available.
- Reduction of antinutrients: Sprouting helps to break down antinutrients such as phytic acid, which can inhibit the absorption of minerals.
- Rich in antioxidants: Sprouted buckwheat contains more antioxidants, which can help neutralize free radicals in the body.
- Improved digestion: The enzymes that are activated during the germination process support digestion and can improve the absorption of nutrients.
And it’s super easy, I promise!
- Soaking: Put the desired amount of buckwheat in a bowl and cover with water.
Leave it to soak for about 6-8 hours. - Rinse: Rinse the soaked buckwheat thoroughly under running water.
- Leave to germinate: Spread the rinsed buckwheat on a sprouter or in a jar with a sprouting lid.
Rinse it 2-3 times a day with fresh water. - Harvest: After 2-3 days, the sprouts are ready to be harvested and enjoyed.

It contains important minerals such as magnesium, iron and zinc as well as vitamins B1 and B6. And if you sprout it, it contains even more.
