The olive has been an important foodstuff for thousands of years and is shrouded in myths and tales. Some of the olive trees have reached an impressive age of more than 2500 years. The Vita Verde Classic organic olives from the Amfissa growing region in Greece are ripe and full-bodied.
Vita Verde only harvests the olives when they are ripe and black , i.e. in December to January. Due to the long ripening period and the late harvest, i.e. the production process of natural drying on the tree, the olives lose weight as they lose liquid. At the same time, they gain in flavor. This process makes it possible to produce the fruit without any denaturation, i.e. without destroying the natural biomolecular structure and guaranteeing the raw food quality.
This type of olive “shrivelled” on the tree is also known as Thrumba olives in Greece. Thrumba olives are a very authentic product – grown in a natural environment and pampered by the sun.
The only other ingredient in these spicy, fruity but still mild olives is a small pinch of sea salt. No heat treatment of any kind is used. Classic organic olives are ideal as a snack between meals, but also go perfectly with classic Mediterranean dishes.
The olives can also be used in salads or as the basis for a delicious tapenade. Finally, mix the paste with olive oil and you have a delicious tapenade without much effort.
